Bread Recipe w/o Tang Zhong or Bread Improver


I have posted a bread recipe w/o bread improver some time ago. That recipe requires tang zhong, which means more work.

Guess it's time for me to post another bread recipe w/o bread improver, and yes, without tang zhong. 

Here is the recipe:

(A)
2 tsp   dry yeast
1 cup  warm water
1 tsp   sugar

(B)
2 cup   bread flour/high protein flour
  ( some additional flour to add on             if needed)
1 tsp    salt
2 tbsp  olive oil
1          egg

Steps:
1) Combine ingredients A in a bowl.

2) Add in the water.

3) Cover the bowl for about 10 minutes.

4) Meanwhile, prepare ingredients B in a mixing bowl.

    --sieve the flour and salt--

    --add in the oil--

   --add an egg--

5) Stir the ingredients in the mixing bowl.

6) Now, open the cover of the yeast mixture that you have prepared earlier on.
The mixture should be lumpy.

7) Stir.

7) Knead the mixture into a dough. Add additional flour whenever necessary until you get a dough like consistency.

8) Proof the dough until it is double in size.
     ( sorry forgot to take the photo) 

9) Once it's doubled, punch the dough and cut it into a few parts as you wish. Proof it again.

10) Bake these bread /buns in the preheat oven at 220 degree celcious for about 20 minutes. 

11) Enjoy your bread! 


p/s: you can also make buns in mushroom shape by putting the dough in the cup cake pan and prof.

Boiled Cempedak (jackfruit) Seeds

Yes, you didn't read it wrongly. It's boiled cempedak seeds. This bolied cempedak seeds are really tasty. The texture is soft, something similar to the texture of roasted chessnut or steamed groundnuts. The smell is good too. 

Well if you haven't known how it is prepared, do check this out here. Here, I am showing how the seeds are boiled and how they actually look like.

1) Wash the seeds and put them into a cooking pan.

2) Cover the seeds with water. Add some salt. Boil them.
    Turn the fire high until the water is boiled. Then turn to slow fire.

3) Boild until the seeds are soft.

4) Enjoy the seeds.

Operating the Jackfruit



Many people love jackfruits. However, the local here knows that there are generally 2 types of jackfruit, called the nangka and cempedak. Both are jackfruitz but the flesh and size are different, not to mention the taste! In fact, the way to cut the fruit is also different.

Here, I am going to show the usual (proper) way to cut the cempedak.

1) Oil your knife. (Because the skin is sticky)

2) Cut the fruit vertically.

3) Tear the skin of the fruit. 

4) Lift the jewels by holding up the stick.

Crispy Fried Eggs

Here is the recipe my son used to make the fried crispy egg for the family. 

This is his dad's favourite and he demands only my son to cook this for him.

4 eggs
2 tbsp fried chicken flour 

1) Break the eggs into a bowl. Mix in the flour and whisk. Scoop and...

This is the flour brand he used.

2) Fry the egg a little at a time. Do not fry everything at one go.

3) Serve.

Tip: Use more oil to fry. You can drain it later.

Fried Crab Stick

This is a simple recipe:

1 packet crab sticks
Oil for frying

1) Tear (the plastic), strip and sun dry the sticks.
Here is more than one packet definetely.


2) Fry.

3) Drain and cool. 

4) Store.

Now, you can enjoy your crunchy crab stick crackers. 




Soy Bean Crackers

 Here is the recipe...

1 1/2 cup flour
1/4    cup sugar
1/2    cup soy bean milk 
1        tsp oil


1) Sieve the flour. (I used normal wheat flour, but you can use low protein flour)

2) Add in the sugar.

3) Add in the soy milk. (Note I didn't sieve the milk)

4) Mix and knead.


5) Getting ready.

6) Roll, flatten and cut.



7) Fry.

8) Cool.

9) Store.
